Ingredients

  • 2 cups sliced leeks, halved lengthwise, cut into 1/4 inch slices (1 medium leek yields ~2 cups or 180 g)
  • 1 Tbsp olive oil (or vegan butter // if oil-free, sub with twice as much water)
  • 1/2 cup finely chopped celery*
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 3/4 tsp dried thyme (or 2 tsp fresh)
  • 4 large cloves garlic, minced
  • 4 cups chopped potatoes, washed thoroughly, cut into 1/2-inch cubes (we prefer unpeeled Yukon gold // 1 ½ lbs yield ~4 cups)
  • 2 ½ cups water (or sub up to half with vegetable broth and use less salt)
  • 1 cup canned light coconut milk (or sub homemade cashew cream*)

Instructions

  • Remove the end and dark green part of the leek and discard (or reserve greens for making vegetable broth). Slice the white and light green part of the leek in half lengthwise and clean by running cold water over each half, getting in between the leaves to remove any dirt. Then slice into 1/4-inch slices.
  • Heat a large pot or Dutch oven over medium heat and add the olive oil, chopped leek, and celery. Cook for about 5 minutes, until everything is slightly softened and fragrant. Add salt, pepper, thyme, and garlic. Cook for another 1-2 minutes, stirring frequently.
  • Add in the potatoes, toss to evenly combine leek mixture with the potatoes, and sauté for 3-4 minutes, stirring frequently.
  • Add in the water and coconut milk and bring the soup to a boil. Once boiling, reduce to a low simmer and cover for 20-25 minutes, stirring every 10 minutes or so. After 25 minutes your potatoes should be fork tender but still somewhat intact.
  • Once your potatoes are cooked, use an immersion blender to purée 3/4 of the soup, leaving some small chunks of potato. You can also put half of the soup in a high-speed heat-proof blender, blend until smooth, and add it back to the rest of the soup. We like our soup a little rustic and brothy with pieces of potato, but you can also purée it until completely smooth if preferred.
  • Taste and adjust as needed, adding salt for overall flavor, black pepper for kick, or more thyme for complexity.
  • Serve in bowls (optionally) garnished with sliced green onions or chives, coconut bacon, and vegan sour cream. Store leftovers in a sealed container in the refrigerator for 3-4 days or in the freezer for 1 month. Reheat on the stovetop over low-medium heat until warm.

Notes

*Wondering what to do with extra celery? Make green juice!
*To replace the coconut milk with homemade cashew cream, soak 1/3 cup cashews in hot water for 20-30 minutes. Then drain and blend on high with 2/3 cup water until smooth and creamy.

Ingredients

  • 6-8 medium yukon gold potatoes (if large, cut in half)*
  • 1 tsp sea salt (divided)
  • Water to cover
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • 5-6 cloves raw or roasted garlic (or sub minced garlic sautéed for 3 minutes in olive oil)*
  • 3-4 Tbsp vegan butter (such as Earth Balance // melted/softened)
  • 1/4 cup fresh chives (for topping // optional)

Instructions

  • For creamier mashed potatoes, peel your potatoes at this time. Otherwise, just halve your potatoes and place in a large saucepan or pot and cover with water by ~1 inch.
  • Bring to a light boil over high heat and add 1 tsp of sea salt (as original recipe is written // adjust if altering batch size), and cook for 25-30 minutes or until very tender. They should effortlessly slide off a knife when pierced with a knife.
  • While the potatoes are cooking, chop up your chives (optional) and measure your vegan butter.
  • Once tender, drain your potatoes and place them back in the hot pot off the heat for 1 minute to evaporate any additional water.
  • Mash your potatoes using a potato masher until fluffy.
  • Add in vegan butter, garlic, salt, and black pepper and stir to combine. Taste and adjust seasonings as needed.
  • Lastly top with chives (optional, stir and serve as is or with your favorite gravy (or mushroom gravy). Leftovers will keep in the fridge covered for up to a few days. Not freezer friendly.

Notes

*Use organic potatoes if possible, especially since you leave the skin on.
*To roast a head of garlic, simply cup the top off to expose tips, rub with olive oil, wrap in foil and bake for 50 minutes – 1 hour in a 400-degree F (204 C) oven directly on the rack. Cloves should squeeze out easily once cooled. Discard skins/peel.

Ingredients

  • 2 lbs potatoes Yukon Golds work well (1kg)
  • Salt to taste
  • 8 large eggs free range if possible
  • 1 large onion
  • Extra Virgin Olive Oil enough to fry the potatoes and cook the tortilla. You can substitute a neutral oil for frying if you wish (but good quality olive oil really makes a difference!).

Instructions

  • Peel the potatoes and rinse them under cold water.
  • Slice the potatoes into thin slices, I prefer about 1/2 centimeter (some prefer thicker). I use a mandolin to do this quickly and easily.
  • Pat the potato slices dry and put them into a large bowl, sprinkle with salt, and mix well.
  • Heat a 1/2 inch of high quality extra virgin olive oil in a large frying pan at medium low heat.
  • When the oil is hot, add the potatoes and add more oil if necessary until all are covered.
  • Cook the potatoes for 20 minutes at a low heat (they may break apart, that is okay).
  • While the potatoes are cooking, beat the eggs in a large bowl and season with some salt.
  • Slice the onion as thin as possible (julienne style) and fry over a low heat in a separate heavy pan (I like stainless steel) for about 10-20 minutes until they begin to caramelize (stir often).
  • When the onions are caramelized, drain off any excess oil and add to the egg mixture.
  • When the potatoes have been frying 20 minutes, remove them with a slotted spoon into a strainer and allow to cool off while any excess oil drips away.
  • After a few minutes, add the potatoes to the egg mixture and stir well.
  • Let the egg mixture sit for about 20 minutes.
  • In the same pan where you fried the potatoes, remove all the oil (you can reuse it!) and over a medium low heat add the egg mixture.
  • Over medium-low heat, cook the tortilla for about 6-8 minutes per side. Make sure the heat is low enough or the tortilla will cook too quickly and be rubbery. You can run a rubber spatula along the edges to make sure the tortilla isn't sticking.
  • When you are sure that the bottom is cooked and you want to flip the tortilla, take a large plate and put it over the pan and flip quickly! Some egg will likely slip out-- it'll be messy-- but that's okay!
  • Finally, slide out of the pan onto a serving plate and let cool a little before diving in.

Notes

  • Use the best quality ingredients -- this recipe is all about the flavor of the eggs, potatoes, and olive oil. 
  • Take your time. There are quicker recipes out there -- this one is better and worth the extra time.
  • Lower the heat. Make sure to cook over medium-low. Cooking over a heat that's too high will result in a rubbery tortilla. 
  • Cook the eggs and potatoes separately. Many recipes cook them together, but it's worth cooking each to their perfect point in separate pans.
  • Use room temperature eggs. In Europe, many people don't refrigerate their eggs at all. Recipes are meant to use room temperature eggs and it does make a big difference.
  • Let the egg, potato, and onion mixture sit for at least 15 minutes -- minimum! This makes a HUGE difference to the final result. It is a must.
  • Don't fear the flip! You have to go forcefully and quickly to make it happen. Don't be afraid!
  • Use a small frying pan and make two tortillas when starting out. I love this tip because it makes the flip so much easier (the pan is lighter, any dinner plate will work, and if you mess up the first time you still have half the batter left!).
